“Uni was all very unique and none of the varieties were bitter or metallic like uni can sometimes be. Got to sit and watch the chefs pump out bowl after bowl, they're like machines with how popular this restaurant is. Overall it was delicious but there are probably more interesting sushi to spend your time and money on especially if the wait is very long when you get there. Even when you're seated it will be a long wait until they get to your order so enjoy some sake and watch the show.”

“☆Hyakumen Setagaya store☆ This is located along Setagaya Street, which is full of cherry blossoms. When I entered the store, there was a very strong smell of pork bones. It looks like an apartment above, but I'm worried. Ramen + extra seaweed. You can choose between thin noodles and thick noodles, so of course go for the thick noodles. I asked for the noodles to be hard. There are about 4 large sundō in the kitchen. It's cooked well. Is it normal because it smells like this? At the back of the store is a noodle box with the store's name written on it. The noodles were boiled in Taebo. Soup is a balanced type. I added the chicken oil later. It was floating relatively well. Although the amount was large, the scent was only slight. When you sip the soup, the animal feeling leaves your nose. However, the soup was smooth, It's light compared to the smell. There is a certain amount of pork bone, but the soup stock is modest. The soy sauce taste is modest, but there is a certain amount of salt. Overall it has a light taste. Since I'm cooking so much, it might be a time issue. The noodles, made by an unknown manufacturer, are thick and flat. It was served solidly. The texture is smooth and chewy due to the addition of a lot of water. The noodles aren't bad, but they don't mix well with the soup. I had the impression that the noodles were winning. The pork shoulder roast is very hearty. It was about 1cm thick. It was slightly pinkish due to the low temperature cooking style. Moist, soft and juicy texture It's more like soft sautéed pork than chashu. The seasoning was moderate and I personally liked it. The amount of spinach is average. It was boiled just right and had its original flavor. Add 3 sheets of seaweed. The slightly greenish seaweed is normal in size. However, even after soaking it in the soup, it was still quite strong. A type with a strong ocean scent. The flavor was ok. For the condiment, use a small amount of finely chopped green onions.
